Harvested manually in cases
100% de-stemmed
Macerated for 30 days in stainless steel vats with pigeage and remontage
Matured for 12 months in vats (25%) and 3 year old barrels.
Introduced in 2000 with Noé, followed by Paul in 2001, this cuvée is carefully selected from barrels. In the hot vintage of 2003, the mourvèdre grapes thrived, providing exceptional aromatics and concentration.
Tasting Note
The intense garnet-red wine has a complex nose of red fruit and spices with a rich texture. The finish is very long with silky tannins. Yield: 30hl/ha
Can be kept for up to 15 years. Decant before serving.
Best drunk with game birds.
