Structured and white-fleshed fruits

 Terroir 
Mostly from the plateau of the high and low Artèmes. Late terroir at altitude (300 meters), south-facing on sandstone molasse soils and limestone slate subsoils. It is the most southerly of our terroirs, the wines are structured, made for aging with notes of fruit always on freshness.
 Assembly
 40% Roussanne, 25% Grenache Blanc, 25% Clairette, 10% Viognier
 Age of the vine
 35 years old.
 Yield
 35 Hl/ha.
 Cultivation methods
 Organic farming, double cordon de royat pruning, disbudding, green harvesting and pre-sorting before harvest. Soil work.
 Winemaking
 Destemmed harvest. Direct pressing at low pressure. Cold settling for 18 hours. Alcoholic fermentation at 20°C for 4 weeks with indigenous yeasts; MLF carried out.
 Breeding
 50% in stainless steel vats on fine lees (Viognier and Clairette) 50% in old barrels for 3 months (Roussanne and Grenache Blanc).
Tasting
 Pale yellow color with green highlights. Complex nose of peaches and pears, with notes of acacia flowers combined with smoky notes. Balanced, slightly saline, and refreshing palate, nuanced with a lovely minerality.
