Terroir
Coming from the 'Faysses' area, it is the unique reflection of a terroir of limestone gravel spreading, combining power and balance. With a very northern Rhône style, the Gouverneur is a very delicate wine, built for aging. It is the expression of this great terroir with power in a velvety structure.

85% Syrah, 15% Grenache
Age of the vine
35 years old. Mass selection.
Yield
23 Hl/ha.
Cultivation methods
Organic farming, double cordon de royat pruning, disbudding, manual harvesting, eco-grazing.
Winemaking
Destemming 90%. Cold pre-fermentation maceration for 4 days with pumping over without oxygen. Yeast addition. Alcoholic fermentation at 23°C with daily pumping over for 2 weeks and alternating with punching down. End of maceration for 5 days with gentle punching down.
Breeding
12 months in barrels: 20% new and barrels of 2-3 wines for the rest.
Tasting
Beautiful, deep, dark ruby red color. The bouquet is intense, with rich notes of blackberry, blackcurrant, and licorice elegantly paired with hints of vanilla and toast. The smooth attack is a prelude to a rich, full-bodied palate, lingeringly lined with ripe fruit and spices over a well-constructed tannic structure and well-controlled oak. Length, distinction, and good aging potential characterize this Gouverneur.
