Terroir
Places known as Les Faysses, Briançon and Gaujas. Terroir of lower slopes of medium altitude (150m) facing rather north on soils made up of sands, clays and limestone gravels producing rich, deep, balanced wines.
These are wines with excellent aging potential.
Assembly
40% Chardonnay, 30% Viognier, 30% Roussanne
Age of the vine
30 years old.
Yield
20 Hl/ha.
Cultivation methods
Organic farming, double cordon pruning, bud thinning, green harvesting and pre-sorting before harvest. Alternating tillage and cover crops.
Winemaking
Direct pressing. Alcoholic fermentation in barrels.
For Chardonnay, 8 months <13°C. Alcoholic fermentation in concrete eggs for Viognier for 8 months <13°C and in stainless steel tanks for Roussanne (also 8 months).
Livestock farming
8 months on fine lees.
Tasting
Beautiful pale yellow robe, bright and luminous. Yellow fruits, white flowers, and vanilla notes compose an intense and beautifully mature nose. The palate shows a real balance between richness and freshness; it is at once intense, delicate, silky, and long, with aromas of apricot, peach, acacia blossom, and sweet spices. The persistent finish prolongs the pleasure.
