Cultivation methods
Double Royat cordon pruning, disbudding, eco-grazing.
Winemaking
Hand-picked, 100% destemmed, indigenous yeasts, 21-day alcoholic fermentation, racking, MLF, no sulfiting, no filtration.
Breeding
The winemaking process is very traditional, except that we do not use SO2 or any other oenological input. The grapes are destemmed and then the maceration phase lasts approximately 15 days during which we only work on the extraction by daily pumping over to promote the expression of the fruit. The pressing takes place taking care to separate the presses. The MLF is carried out and the wine is not racked before bottling. No aging for this vintage because the bottling took place at the beginning of December.
Tasting
Intense purplish color, announcing the depth and concentration of this wine. On the nose, powerful aromas of ripe black fruits, black pepper, and peony. On the palate, a subtle attack gives way to a rounded and concentrated wine, with velvety tannins and a lingering finish.
