Terroir
Localities: Les Hauts et Bas Artèmes, Les Hauts Heyrauds. Late-ripening terroir with a southern exposure, on a hillside with an average altitude above 300 m. The wines produced on these soils are more structured and have a beautiful density, giving them aging potential. Mediterranean notes of pine forest and garrigue characterize them.
Assembly
70% Syrah, 30% Grenache.
Age of the vine
30 years old.
Yield
25 Hl/ha.
Cultivation methods
Organic farming, double Royat cordon pruning, disbudding, pre-sorting before harvest. Alternate grassing and soil cultivation (ploughing).
Winemaking
100% destemmed harvest, cold pre-fermentation maceration at 7° for 1 week, yeast addition, alcoholic fermentation for 15 days at 25° then vatting for one week. Juice run-off, malolactic fermentation in vats.
Breeding
1/3 of the volume is aged in foudre and 2/3 in barrels for 12 months. Blending before bottling.
Tasting
Deep ruby color, the nose presents a dominance of jammy black fruits with notes of blackberry and blueberry. The ample palate becomes more complex with the melting of tannins and wood that blend with notes of black olive.
